Ingredients

  • 2 tbsp Black cardamoms or Badi Elaichi not very big size
  • 1 tbsp green cardamoms or Choti Elaichi
  • 1 tbsp cloves or Laung
  • 2 tbsp whole black peppercorns or Kali mirch
  • 2" Cinnamon or Dalchini
  • 4-5 Bay leaves or tej patta
  • 4 star anise or Chakr Phool
  • 1 tbsp dry pomegranate seeds or anardana
  • 3 tbsp coriander seeds or dhaniya
  • 2 tbsp cumin seeds or Jeera
  • 1 tbsp Shahi Jeera
  • 4 Aloo Bukhara

Instructions

  • Set a skillet over medium heat and add all the ingredients except the bay leaves, aloo bhukhara and the spice powders. Dry roast them for 2 mins stirriting continously. Turn off the heat and allow them to cool down completely.
  • Transfer the roasted ingredients into a blender jar and blend to a fine powder.
  • Pour the ground masala powder in a bowl and add the spice powders, the aloo bhukhara and the snipped bay leaves to it and mix well. Store the homemade biriyani masala powder right away in air tight containers.

Notes

  1. Measuring Units used, 1 cup = 240 ml & 1 teaspoon = 5 ml.
  2. The recipe will yield 136 gms Biriyani Masala Powder. If you omit the Aloo Bukhara the weight will be less.
  3. Aloo Bhukhara is totally OPTIONAL.
  4. Do not over roast the spices.
  5. Store the Biriyani Masala Powder Right away.
