Sauces

Liquid

  • 2 cups Water

Instructions

Scramble eggs

  • Crack the eggs in a bowl and beat them well until smooth. Set them aside.
  • Set the instant pot on sauté mode set at high heat. Add 2 tbsp oil, when the oil becomes moderately hot gently pour the beaten eggs and stir briskly until the eggs are scrambled well. You need the scrape the sides and the bottom of the pot with the help of your spatula while stirring the eggs. This will prevent the eggs from sticking at the bottom of the pot. Transfer the scrambled eggs in a separate bowl.

Rinse & drain rice

  • Rinse the rice under running tap water by gently rubbing the grains with your fingers. Repeat this process until the water runs clear. This will help rinse out the surface starch from the rice and prevent the rice from getting gummy. Drain the rinsed rice with the help of a colander. Set aside.

Pressure cook

  • Now transfer the drained rice into the instant pot and spread it out in single layer on top of the ground pork. Do not mix or stir. Layer the diced carrots on top of the rice layer. Do not stir or mix.

  • Secure the lid of the instant pot and seal the valve. Pressure cook on high for just 4 mins. Once, the cooking cycle is over the instant pot will begin to beep. Wait for 10 mins natural pressure release and than release the rest of the pressure manually by moving the valve from the sealing to the venting position. Open the lid carefully. Turn off the instant pot.

Add sauces & scrambled egg

  • Now, add the thawed green peas and gently fluff the cooked rice with the help of a fork or a pair of forks. In the meantime, add the dark soy sauce, the low sodium regular soy sauce and the toasted sesame oil in a small bowl and whisk with a spoon to mix well. Add this to the rice and gently mix with the help of a spatula until the rice is well coated with the sauces. Add the scrambled eggs and mix well. Allow the pork fried rice to rest for 5-10 mins before serving. You may serve the pork fried rice garnished with chopped green onions. Enjoy!

Notes

  • Rinse rice: Rinse rice very well to avoid sticky, gummy rice. The surface starch will rinse out and make the rice fluffy and light.
  • More flavor: You can toss the ground pork with 1 tbsp low sodium soy sauce before browning the meat. This will elevate the flavors of the pork. We skipped this step!
  • Gluten free sauce option: Tamari is the best gluten free alternative of light soy sauce.
  • More veggies: You can add diced green beans, thawed corn kernels and even diced baby bella or white mushrooms. Add them along with the diced carrots in a single layer.
  • Spicy pork fried rice: Add about 1-2 tsp red pepper flakes along with the sauces.
  • Can I use Brown Rice? No you can't use brown rice for today's recipe. Brown rice has different cooking time.
  • Soy Sauce contains salt so do add salt carefully in the recipe. Otherwise you'll end up with salty fried rice. We didn't add any extra salt. The sauces provided enough saltiness.
