Ingredients

  • 1 cup loosely packed dates (pitted). About 8 Medjool dates. I always prefer Medjool dates, they are so delicious.
  • ¼ cup Maple syrup or honey.
  • ¼ cup creamy Almond butter or peanut butter.
  • 1 cup toasted almonds.
  • 1 tablespoon chia seeds.
  • 1 - ½ cups gluten-free rolled toasted rolled oats.
  • 1 teaspoon extra virgin coconut oil.

Instructions

  • 1. Add the pitted dates in a blender or food processor and blend until small bits, not mushy or a paste.
    2. Pre-heat the oven at 350 degrees F.
    3. Toast the almonds and the oats at 350 degrees F or toast them on a non-stick skillet over medium heat.
    4. Take a dry bowl and add the toasted oats, almonds, the chia seeds, the melted extra virgin coconut oil and the dates. Keep aside.
    5. Next heat a saucepan over medium heat, when hot add the maple syrup or honey and the almond butter or peanut butter, stir and mix, don't boil.
    6. Next add the nut butter and the maple syrup mixture to the bowl.
    7. Mix until fully incorporated.
    8. Line an 8"x8" pan with parchment paper.
    9. Transfer the mixture on to the baking tray lined with parchment.
    10. Spread it evenly press it hard with the bottom of a glass. This will help the bars to set very well.
    11. Keep it in the refrigerator for 1-2 hours or until set.
    12. Cut it into bars with a sharp knife.

Notes

  • Blend the dates so that tiny bits remain. Don't blend them into a paste. This is very important.
  • Toasting the nuts and the oats gives these no-bake breakfast bars an incredible crunch and enhances the taste manifold.
  • Press the mixture into the baking tray as hard as possible. This will ensure very good granola bars.
