Instant Pot Gajar Ka Halwa is an Indian dessert that's cooked with grated carrots, milk, sugar, lots of ghee. Carrot Halwa is flavored with cardamom seeds & garnished with chopped nuts. Gajrela is a winter favorite dessert in North India.

Ingredients

Measuring cup used, 1 cup = 240 ml & 1 teaspoon = 5 ml.

  • 8 cups grated carrot organic preferrable
  • 3.5 cups whole Milk Full Fat
  • 2.5 cups cane sugar or white sugar
  • 6 Black Cardamoms seeds only
  • 2 tbsp silvered almonds or more
  • 2 tbsp silvered pistachios or more
  • 2 tbsp Golden Raisins or more
  • 1.5 cups Ghee melted, liquid state
  • ½ cup Mawa (Khoya) Powder optional
  • 2 tbsp Cashews
  • More chopped nuts + raisins for garnish

Instructions

  • Turn on the Instant Pot. Pour milk & add the grated carrots.
  • Press the PRESSURE COOKER button & set it to HIGH.
  • Close the lid, seal the VENT & pressure cook on HIGH for 1 minute.
  • After 1 min when the IP (Instant Pot) starts to beep, do a QUICK PRESSURE RELEASE.
  • Open the lid. Press CANCEL. And then press the SAUTE button & set it to HIGH.
  • Add cardamom seeds, chopped nuts & raisins, stir well and Allow the milk to evaporate, stir continuously. If you feel that the heat is too much to handle than quickly change the SAUTE settings from HIGH to NORMAL.
  • When you feel that the milk is drying up add sugar mix well. Sugar will make it a bit runny, don't worry that's normal. Keep stirring, add ghee & keep sauteing!
  • When the carrot begins to become translucent, glossy, you get a nice aroma, & the carrot becomes darker add the mawa powder & saute for few more minutes until it completely dissolves.
  • Garnish with more chopped nuts & raisins and serve hot. Enjoy!

Notes

  1. Organic carrots taste best.
  2. Use the best ghee, it makes all the difference.
  3. Saute with ghee for some time. This enhances the taste.
  4. You may use more or less chopped nuts & raisins. 
  5. You may grate the carrots manually with a grater or use a food processor.
  6. This Instant Pot gajar ka halwa keeps good for 2 weeks in the refrigerator.
  7. This carrot halwa keeps good for 2 months in the freezer.
  8. You may substitute black cardamom seeds with green cardamom seeds.
  9. You may skip adding mawa powder totally, in that case, reduce the ghee by 4 tbsp.
  10. 8-9 big carrots will yield almost 8 cups grated carrot.
