chicken Frankie from one of the temporary street food booths.
Every trip back home makes me insanely home-sick & nostalgic. I terribly miss two things - Family & Food, especially street food! Indian street food has so much to offer, it's special and it's close to so many hearts no matter how far you stay away from your home country. Every street corner unfolds with a very unique locally hefty and ethnic food story, the makeshift stalls, the permanent wheeled shafts, the not so permanent rustic thatched stalls every single one beams with lip-smacking quick snacks that are very hard to deny!
Today's recipe of Step-by-step Chicken roll - Kolkata Style is similar to the ones that you get in the famous egg roll stalls in Kolkata, I have developed this particular taste after going through innumerable trials and errors and believe me, mimicking a certain taste note is not so easy, it requires both patience and time! I was waiting for this day all this time, the day when I will manage to hit the perfect recipe notes and share the recipe with you all because this egg chicken roll is very close to my heart and so are you, my dear readers! This recipe of Chicken roll is one such food story that surrounded the maximum part of my childhood. Hope it pleases your taste buds as much as it pleases ours!
What is Chicken Kathi Roll or Chicken Frankie?
A Chicken Kathi Roll is the most renowned street food available in the street side stalls in Kolkata. A brilliant street side snack to grab in a hurry. It's marinated & sauteed boneless chicken stuffed inside an all-purpose flatbread that's lined & cooked with an egg first. The flatbread is slathered with sauces, especially tomato and chili sauce & then dressed with thinly sliced onions, cucumber, chopped green chilies & fresh cilantro along with the sauteed chicken! The stuffing is wrapped with the flatbread and relished as is.
What will I need to prepare Kolkata Style Egg Chicken Roll?
Well, you will need some very basic stuff to prepare the most amazing Kolkata style Chicken Kathi Rolls. Perhaps you don't even need a trip to the store if you already have some chicken lying in your fridge! For the flatbread, you will need all-purpose flour or maida and one egg for each flatbread, oil to fry and your favorite griddle. For the stuffing, you will need boneless chicken cut into bite size pieces, some regular spices like turmeric powder, chili powder, tandoori masala, cumin powder & coriander powder, few drops of lemon juice, some mustard oil and a drizzle of salt. For assembling the Chicken roll you will need some thinly sliced cucumber, onion, chopped green chilies & cilantro and sauces like tomato + chili sauce. No worries if you have only chicken with bone in, Just boil them first and tear the cooked meat from the bones and then skip the marination part and directly sautee them with the ingredients.
What's in a Kati Roll ?
Kati Roll is basically a wrap that consists of a light salad filling + a lip-smacking boneless sauteed chicken filling with of course a fair amount of sauces like tomato sauce and green chili sauce.
How to prepare Kolkata Street Food style egg Chicken Roll at home?
There are several ways to prepare a Chicken Kathi roll and every recipe is slightly or entirely different from the other. I found the Chicken Kathi rolls in Mumbai very different in terms of taste when compared with the chicken rolls in Kolkata! Different taste, a different pairing of flavors, and very distinct in terms of the stuffing! The chicken Frankie recipe provided here is a copycat version of the ones that you get in Kolkata from the street vendors. When prepped ahead of time it's a quick recipe that is interesting and so delicious that one single roll is never sufficient to satisfy one's yearning hungry soul! We love to enjoy this street food as our weekend brunch, ain't that brilliant?
The good news is that you can easily prepare Chicken Kathi Roll Street Style at home with a little bit of prep. It constitutes 2 major steps: Firstly, you have to prepare the all-purpose flour flatbread or maida paratha and line it with an egg and cook it on a tawa or griddle. Secondly, you have to prepare the chicken stuffing with the mentioned ingredients. Finally, you have to assemble your Chicken rolls for that you will need some thinly sliced cucumber, onion, grated carrot, chopped green chilies & cilantro/coriander leaves and tomato + chili sauces. You have to slather quite a bit of the sauce on your flatbread, line it with the salad and the sauteed boneless chicken, drizzle some chaat masala and top it with some more sauce if you prefer. Then, wrap it and fold it with wax paper or a piece of old newspaper or even an aluminum foil and serve immediately. They taste best when hot. How long can I store Chicken Kathi Roll?
Chicken Kathi Rolls taste the best when served fresh and hot. But you may go ahead and prepare your sauteed chicken and store them in an airtight container in the refrigerator. It tastes good for 7 days. You may also prepare the all-purpose flour flatbread 1 day in advance and store them in the fridge in an airtight box. Before preparing the wrap, bring them to room temperature and slather them with one egg and cook on the griddle with oil. I prefer to follow this method when I plan to cater to a huge number of guests at home.
Can I replace the all-purpose flatbread in this chicken Frankie recipe with something else?
Yes, sure you can replace the all-purpose flatbread in this recipe with a whole wheat flatbread (chapati/roti) or tortilla. But, please note that changing the flatbread will alter the authentic street food taste. The choice is yours! The same rule applies to the stuffing too.
Step by Step Instructions to make Chicken Kathi Roll Street Style:
How to prepare the flatbread or the paranthas / Crepe:
1. In a clean dry bowl gently sieve the all-purpose flour & salt, whisk then add the oil and mix with your fingers, gently rub and mix. This helps to uniformly distribute the oil.
2.Add cold water in small amounts and start kneading the dough until a soft and smooth dough forms. It should not stick in your fingers at the final stage. Cover with cling film and allow the dough to rest for 15 mins.
3. After 15 mins divide the dough into 5 equal portions and smoothen the portions into round balls.
4. Next, with the help of a rolling pin roll each ball into a flat disk about 7-8 inches. Roll all the 5 balls into round disks.
5. Heat a griddle over medium heat and gently place the rolled dough. You can see bubbles forming, gently flip on the other side brushing oil on each side and cooking both sides. When you see brown spots appearing it's time to switch off the flame and keep the flatbreads aside
How to line the parathas with egg:
Heat a griddle or tawa over medium heat. Brush the surface with oil. Next place one paratha and crack one whole egg on top of the paratha, spread it and gently flip. cook until the egg clings on the paratha. Follow the same process for the rest of the parathas and keep the egg lined parathas aside.
How do you make Chicken Roll Filling or the sauteed chicken filling?
1. Add all the mentioned ingredients except the 2 tablespoons canola oil + the tomato paste and marinate the chicken for at least 15 mins.
2. Next Heat 2 tablespoons canola oil on a griddle over medium heat and gently release the marinated boneless chicken pieces and saute for 15 mins or until done. Halfway through add the tomato paste and saute until done. Keep aside the sauteed and cooked chicken.
How to Prepare the Salad for stuffing:
1- If you want you can mix all the mentioned chopped and sliced ingredients in a bowl except the sauces and keep aside. I didn’t do that.
How to assemble the Chicken Kathi Roll or egg Chicken roll:
- Take one egg lined flatbread or paratha, egg side up and spread about 1-2 teaspoons each tomato and chili sauce, or more if like to do so.
- Next line the paratha that’s smeared with sauces with the salad ingredients. Place about 4-5 pieces sauteed chicken per paratha, drizzle drops of sauces if you prefer and wrap them. Finally, fold the wrap with a wax paper to keep them secure.

- 1 tsp Ginger Garlic Paste
- ½ tsp Cumin Powder
- ½ tsp Coriander Powder
- ½ teaspoon garam masala powder.
- ½ tsp Red Chili Powder
- 1 teaspoon tandoori masala powder.
- ¼ teaspoon turmeric powder.
- 1 teaspoon lemon juice.
- 1 tablespoon yogurt.
- 1 teaspoon mustard oil + 2 tablespoons Canola Oil.
- ½ tablespoon ready made tomato paste (optional).
- Salt (to taste)
To Prepare the salad for stuffing:
- ½ cup thinly sliced cucumber.
- ½ cup thinly sliced onion.
- ¼ cup finely chopped cilantro or coriander leaves.
- 6-7 green chilies finely chopped (optional).
- ⅓ cup grated carrot.
- Tomato + green chili sauce according to taste.

Notes
- Adding cold water to the flour while kneading will result in crispy flaky soft paratha.
- Overstuffing the parathas will not help them to wrap up well. So, it's wise to eyeball the stuffing.
- You may replace the all-purpose flour with whole wheat flour or even ready-made tortillas but the roll won't taste similar to the street food rolls.
- You may alter the quantity of spices to saute the chicken according to your taste preference.
- The sauteed chicken can be prepared well ahead of time and stored for up to 7 days in an airtight container in the refrigerator.
- They taste best when served hot.
- The recipe can be made kid-friendly by skipping the green chilies and the green chili sauce.
- It's important to saute the chicken and make it into a dry consistency, otherwise the flatbread will become soggy.
- Before rolling the dough smear the rolling pin with little oil and also brush the surface where you plan to roll the dough with few drops of oil. This will result in a smooth rolling.
