Homemade Potato Wedges

Cut back the calories from your regular potato wedges by air frying them with so little oil. These easy potato wedges are tossed in few drops of olive oil, grated parmesan cheese, a few common seasonings and than air fried to crispy golden perfection!

You'll love them, the savory garlicky flavor is simply irresistible!

You can make your healthy potato wedges spicy by adding red pepper flakes or a few dashes of cayenne! Serve them right away with your favorite sauce like ketchup, ranch, Yum yum sauce, bang bang sauce.

Ingredients & Substitutions

  • Potato: You can use Yukon gold potatoes or russet potatoes or yellow potatoes.
  • Potato wedges Seasoning: Paprika (use smoked for a smoky flavor or sweet for a subtle flavor), Italian seasoning, crushed or ground black pepper, garlic powder or garlic granules, and salt to taste. You can swap the Italian seasoning with either oregano, parsley or even thyme. Use whatever you like.
  • Oil: Extra light or light olive oil. You can also use avocado oil.
  • Cheese: Grated parmesan cheese.

  • Crispy potato wedges secret: Do not overcrowd your air fryer basket. Lay the potato wedges in a single layer so that hot air can circulate & make the quick potato wedges a lot crispier. You can also sprinkle cornstarch before air frying the wedges. This will make them extra crispy.
  • Spicy potato wedges: Toss the potato wedges with 1 teaspoon red pepper flakes or ¼ teaspoon cayenne along with the other ingredients.

How do you cut potatoes into wedges?

Slice the potato in half lengthwise. Then place the cut side down onto the cutting board and slice it in half again to make quarters.
Place each potato quarter cut side up, then slice down the center of the quarter lengthwise to create wedges. The number of wedges you get out depends on the size of the potato. We prefer the thicker end of the wedges to be around ½ inch.

  • Cut potatoes & season: Cut the unpeeled whole potato into wedges. Rinse well, drain and pat dry the potato wedges completely. Add oil & parmesan cheese, coat well. Than, add all the dry spices & herbs. Toss well to coat the wedges.

Step #2 Air fry wedges

  • Air fry: Layer the seasoned wedges in a single layer in the pre-heated air fryer basket. Air fry at 390 F for 15 mins. shaking the basket every 5 mins. Flip sides after initial 10 mins and than air fry for another 5 mins.
  • Serve: Serve the quick potato wedges sprinkled with more grated parmesan cheese and your favorite dip! Enjoy!

Microwave oven: Reheat these quick potato wedges in the microwave oven until warm or hot. Serve immediately.

Air fryer: Reheat the wedges in a 390 F pre-heated air fryer for about 5 mins. Serve immediately.

How do you crisp potato wedges?

You can crisp potato wedges by sprinkling corn starch on the wedges and than air fry them. You can also soak the wedges in ice cold water for 30 mins, drain, pat them dry completely, season and than air fry.

Which potato is best for wedges?

Russet potatoes, Yukon gold potatoes, yellow potatoes and even red potatoes make good homemade potato wedges. We prefer russet or Yukon gold potatoes because they crisp up very well and have fluffy tender insides.

Are potato wedges healthier than fries?

Air fryer potato wedges and baked potato wedges are healthier than fries because they are not deep fried. They have a fraction of the calorie count!

Why do you soak potatoes in cold water before air frying?

Soaking the potatoes in ice cold water for just 30 mins helps draw out the maximum starch from the potatoes. This will result in a crispier fry or wedges. After soaking, be sure to dry the potatoes before you fry them.

Why are my wedges not crispy?

If your potato wedges are not pat dry completely before tossing them in the seasonings than the wedges might not turn out crispy. Over crowding the wedges in the air fryer basket while air frying them will also lead to soggy and soft potato wedges. The wedges will steam instead of bake. Space them out and always layer the potato wedges in a single layer in the air fryer basket.

How long should wedges be in the air fryer?

Homemade air fryer potato wedges turn out perfectly crispy in about 15 mins. Air fry the potato wedges for 10 mins first and than flip sides and cook another 5 mins to make them perfectly crispy on the outside. You might need to add a few mins extra depending on your air fryer make, model & brand.

Ingredients

  • 1 large Potato (**Yukon gold or russet or yellow potato. We used Yukon gold potato. )
  • 2 tbsp Parmesan Cheese (**grated parmesan cheese.)
  • 2 tbsp Olive Oil

Seasonings

  • ½ tsp Paprika (**smoked paprika. )
  • ½ tsp Italian seasoning
  • ½ tsp Ground Black Pepper (**or freshly crushed black pepper.)
  • ¼ tsp Garlic Powder (**or use garlic flakes.)
  • Salt (to taste) (**use according to your own personal taste preference,)

Instructions

Prep wedges

  • Slice the whole potato into wedges (scroll up to read how to cut potato into wedges) .Rinse the wedges very well under running tap water several times until clear water runs through. This will help remove the potato starch and in turn make the homemade wedges crispy. Drain the wedges & pat them dry completely with the help of kitchen towel. Place them in a large bowl.

Season the wedges

  • Add olive oil & grated parmesan cheese and toss the wedges to coat them well. Now, add all the seasonings mentioned above in the "Seasoning" section in the ingredients list. Toss to coat the potato wedges very well.

Air Fry

  • Pre-heat the air fry at 390 F for 4 mins. Transfer the seasoned potato wedges into the air fryer basket and arrange them in a single layer. Do not over crowd or stack the wedges. Air fry at 390 F for 15 mins. After 10 mins of cooking flip the potatoes with the help of a tong. Than, cook them for 5 more mins. Once done transfer the homemade potato wedges on a plate.   • Air Fryer: This recipe has been tested using a Bella air fryer, Instant vortex air fryer and using the instant pot air fryer lid.
  • Cook time: You might have to slightly change the cook time depending on your air fryer make, model and brand.
  • Best Potatoes: Yukon gold, Russet, gold potatoes and even red potatoes work amazingly well. We used Yukon gold potatoes.
  • Spicy potato wedges: Add ¼ tsp cayenne pepper or ½ red pepper flakes to make this recipe spicy.
