This hibachi style chicken in the air fryer always yields juicy chicken and tender veggies just like they serve in the popular Hibachi restaurants. This dish is a perfect candidate for meal preps and lunch boxes! Make it spicy if you want to, however todays recipe is kids friendly and is non-spicy.
Ingredients & Substitutions
Find the Ingredients with actual measurements at the bottom of the post. The list below is just a reference.
- Chicken: Boneless skinless chicken breasts or thighs.
- Veggies: Carrots, zucchini, yellow squash, white mushrooms. You can also use fresh broccoli florets.
- Aromatics: Yellow onion, fresh ginger root and garlic. You can sub the yellow onion with red onion. Avoid using ginger and garlic powder. Fresh minced ginger and garlic would enhance the dish many fold.
- Sauces: Low sodium soy sauce or Tamari or coconut aminos. And Rice vinegar. You can use regular soy sauce if you are not watching the sodium content.
- Seasonings: Crushed black pepper or ground black pepper powder.
- Cooking fat: Toasted sesame oil and melted butter. Use toasted sesame oil for best flavor. You can use either salted or unsalted butter.
- Optional garnish: White sesame seeds.
Tips for success
- Chicken pieces: Dice the boneless skinless chicken into equal sizes for uniform cooking. We like to dice the chicken into 1.5 inch cubes.
- Best flavor: Always use fresh ginger root and fresh garlic pod in this recipe for the best flavors. Mince them well into small pieces. The fresh ginger and garlic would elevate the flavor almost instantly and you'll have the best hibachi chicken recipe ever! Using melted butter will also give this recipe the authentic Japanese steakhouse style hibachi flavor. Also, use toasted sesame oil instead of the regular sesame seed oil. The melted butter, the toasted sesame oil and the fresh ginger and garlic would all combine to create the best hibachi flavor.
- Soy sauce options: Use low sodium soy sauce or tamari or coconut aminos for lesser sodium content.
- Healthier option: Skip the melted butter and replace it with equal amount of extra light or light olive oil.
- Spicy hibachi chicken: You can add about 1 tablespoon sriracha sauce or 2 tsp chili flakes along with the other seasonings. This will give the recipe a spicy kick.

Step #1 Marinate chicken
- Marinate chicken: Toss the cubed boneless chicken pieces with the lemon juice, sauces, seasoning, sesame oil and the minced ginger and garlic. Make sure the chicken pieces are well coated.
- Add veggies: Add the diced veggies into the bowl and toss everything well.
Step #2 Air fry chicken
- Air Fry: Transfer the chicken and the veggies in the pre-heated air fryer basket and air fry for 15 mins at 390 F shaking the basket every 5 mins to ensure even cooking. Once the hibachi chicken is ready serve it with yum yum sauce and fried rice on the side.

Leftovers & storage
Store the air fryer chicken hibachi for 5 days in the fridge. Use air tight containers to store this dish. We do not recommend freezing this chicken dinner. The veggies would get mushy when thawed and reheated.
However, if you still want to freeze this dish than do skip adding the veggies and the onion and air fry the chicken along with the sauces and seasonings. Once done freeze the hibachi chicken in individual serving size freezer safe bags or containers for upto 2 months.

Ingredients
- 1 pound chicken (**boneless skiless chicken breasts or thighs diced into 1.5 inch cubes. About 2 cups.)
- 1 cup yellow squash (**diced into ¼ inch half moons.)
- 1 cup zucchini (**diced into ¼ inch half moons.)
- 1 cup Mushrooms (**white mushrooms diced into 3 slices or halved.)
- ½ cup carrots (**diced into 1.5 or 2 inch long and ½ inch thick slices.)
- 1 cup onion (**diced into 1 inch cubes and petals separated. )
- 1 tbsp garlic (**minced.)
- 1 tsp ginger (**minced. Use fresh ginger root. Peel it and mince it into small pieces.)
- 1 tbsp Sesame oil (**toasted sesame oil.)
- 2 tbsp Unsalted Butter (**melted.)
- 5 tbsp Soy sauce (**low sodium soy sauce or tamari or coconut aminos.)
- 1 tbsp Rice vinegar
- 1 tsp Ground Black Pepper (**or freshly crushed black pepper.)

Prepare the Hibachi chicken marinade
- Add the diced chicken into a large bowl. Than, add the marinade ingredients like soy sauce, rice vinegar, sesame oil, melted butter, crushed or ground black pepper and minced ginger and garlic. Toss well to coat the chicken pieces very well with the hibachi marinade.
- Next, add the diced veggies and the onion and toss everything well.
Air fry Hibachi chicken
- Pre-heat the air fryer into 390 F for 3-4 mins. Transfer the bowl ingredients (chicken along with the veggies) into the air fryer basket and air fry for 15 mins shaking the basket every 5 mins for uniform cooking. You might have to adjust the cook time slightly depending on your air fryer make, model & brand. We tested this recipe using our Bella air fryer, Instant pot vortex air fryer and also using the instant pot air fryer lid.

- Cook time: This recipe has been tested using a bella air fryer, instant pot vortex air fryer and using the instant pot air fryer lid. You might have to slightly adjust the cook time depending on your air fryer make, model & brand and also the quantity you want to cook.
- Doubling the recipe: If doubling the recipe do cook the hibachi chicken in batches for a delicious Japanese steakhouse style Hibachi flavor.
- Spicy flavor: If you prefer spicy flavor you can add about 1 tablespoon sriracha sauce or 2 tsp chili flakes along with the other seasonings. This will give the recipe a spicy kick.
- More veggie option: If you love broccoli you can add about 1 cup fresh broccoli florets along with the other veggies. The cook time would remain the same.
