Ingredients and Substitutions
Find the Ingredients with actual measurements at the bottom of the post. The list below is just a reference.
- Salmon: Wild caught canned salmon is a budget friendly and easy option. Buy the low sodium variety and don't hesitate to buy canned salmon with bones. The fish bones are a breeze to remove.
- Egg: I used one large egg. You can also use one medium egg.
- Breadcrumbs: I used panko. You can use regular breadcrumb as well.
- Seasonings: Old bay, sweet paprika, crushed black pepper, salt according to your own personal taste preference.
- Mayonnaise: Use real mayo for best flavors.
- Mustard: Use either dijon mustard or yellow mustard. This will add a subtle zing to the patties. So good!
- Red bell pepper: Adds a hint of sweetness. You can also use yellow or orange bell pepper. Do not use green bell pepper.
- Fresh Herbs: Chopped fresh parsley. You can sub the parsley with fresh dill.
- Cooking oil spray: Avocado cooking oil spray is our favorite. It has a high smoke point and hence very good for air frying food at high temperatures.
Best Tips
- Best Canned Salmon: We prefer the low sodium wild caught canned salmon. Do not hesitate to buy the canned salmon with bones. They are a breeze to remove with a fork or your hands. Just pick the bone and discard before mashing the salmon. Also, drain the canned salmon well in a colander to remove any excess moisture.
- Best Patty mold: Use a measuring cup (½ cup) as your patty mold. They will help you form equal sized patties which will eventually result in uniform cooking. So much better than just eyeballing the patty mixture!
- Gorgeous golden patties: The secret to gorgeous golden salmon patties is the right cook time. I tested this recipe using Bella air fryer and also the instant pot air fryer lid, the 12 mins cook time on 390 F worked every time. You might need to slightly adjust the cook time depending on your air fryer model. I would keep on checking the patties from 10 mins onwards and add more mins if needed.
- Avoid dry patties: Do not be tempted to add more breadcrumbs than mentioned in this recipe! ¼ cup breadcrumbs is just perfect. If you add more you'll end up with dry patties that will not taste good.
- Crispy patties: Do not over crowd the air fryer. Layer the salmon patties in a single layer (refer the step photos above), do not stack them. You need to allow proper air circulation inside the air fryer to crisp up the patties on all sides. There's no need to flip the patties half way. Cook the salmon cakes in batches if you are making for a large group.
