Homemade shrimp fried rice

You'll love todays Chinese shrimp fried rice recipe because it's not only easy to make during busy week nights but also tastes much better than any Chinese restaurant!

This recipe will give you non-rubbery juicy shrimp, crisp tender veggies, the right amount of scrambled eggs, non-pungent sesame oil, and perfectly cooked non-gummy rice. This one-pot meal is packed with flavor and nutrition at the same time!

Ingredients and substitutions

Find the Ingredients with actual measurements at the bottom of the post. The list below is just a reference.

  • Shrimp: De-shelled, de-veined jumbo or extra large shrimp. You can also use colossal shrimp.
  • Eggs: Scrambled.
  • Rice: White jasmine rice rinsed and drained well.
  • Veggies: Carrots, green peas. You can also use frozen veggie mix like green beans, carrots, corn and peas.
  • Aromatics: Yellow onion and garlic. They will add depth of flavor.
  • For the sauce: Dark soy sauce, low sodium regular soy sauce or tamari or coconut aminos.
  • Liquid: Stock or water.
  • Sesame oil: Lightly toasted sesame oil or chili sesame oil.
  • Cooking fat: Any neutral oil like extra light or light olive oi, avocado oil, canola or sunflower oil.

Tips for success

  • Best shrimp: Use de-shelled, de-veined jumbo, extra large or colossal shrimp. We used thawed frozen shrimp. You can also use shrimp from the butcher for best flavor.
  • Scrambled egg: You can make the scrambled egg in the instant pot. Set the heat to normal on sauté mode and stir the eggs briskly to make a batch of scrambled eggs.
  • More veggies: You can add green beans and sliced snow peas in the homemade shrimp fried rice. You can also add a mix of frozen veggies like green beans, peas, carrots and corn.
  • Non-gummy rice: Rinse the rice under running tap water several times until clear water runs through. This will help rinse the surface starch from the rice and prevent it from getting gummy or mushy. Also, fluff the cooked rice with the help of a fork. This will make the rice nice and fluffy.
  • More flavor: Toss the shrimp in soy sauce and red pepper flakes and allow them to rest for 5 mins. Than, sauté the shrimp. This will add so much more flavor.

How to make shrimp fried rice?

Step #1 Make scrambled eggs & sauté shrimp

  • Scramble eggs: Scramble beaten eggs with oil in the instant pot set on normal heat on sauté mode.
  • Sauté shrimp: Toss the shrimp in soy sauce and red pepper flakes. Add more oil in the instant pot and sauté the shrimp until they turn opaque.
  • Sauté aromatics: Add the chopped onion and garlic and sauté until the onion begins to turn soft.

Step #2 Deglaze pot, add rice

  • Deglaze pot: Add water and deglaze the pot very well by scraping the sides and the bottom of the pot with the help of a ladle. This will help loosen any stuck food particles and prevent the burn error.
  • Add rinsed rice: Add the rinsed jasmine rice and spread it out in a single layer with the help of a ladle. Do not mix or stir.

Step #3 Pressure cook & fluff rice

  • Pressure cook: Add the carrots on top of the rice layer. Do not stir or mix. Secure the lid of the instant pot and pressure cook on high for 4 mins followed by 10 mins natural release.
  • Fluff rice: Fluff the cooked rice with the help of a fork.

Step #4 Add sauce, veggies, shrimp & eggs

  • Add sauces: Add the thawed green peas and the sauces. Mix well until the rice is well coated with the sauce.
  • Add protein: Add the sauteed shrimp and the scrambled eggs. Mix well. Allow the fried rice to rest for 5-10 mins before serving.

Serving Ideas

You can serve the homemade shrimp fried rice as such. It's a complete meal all by itself. We love to serve it with sriracha sauce or chili garlic sauce for an extra spicy flare. You can also serve it with the following sides:

Ingredients

  • 1.5 cups Jasmine Rice (**rinsed and drained well.)
  • 14 jumbo Shrimp (**de-shelled and de-veined. Frozen thawed shrimp.)
  • 1 cup onion (**roughly chopped.)
  • ½ tbsp garlic (**minced.)
  • 1 cup carrots (**diced into ½ inch squares)
  • ¾ cup Green Peas (**thawed.)
  • 2 large eggs (**beaten.)
  • 4 tbsp Avocado oil (**or any neutral oil like canola, vegetable or sunflower oil.)

Sauces

  • 1 tbsp Dark Soy sauce
  • 2 tbsp Soy sauce (**low sodium soy sauce or tamari or coconut aminos.)
  • 1 tsp Sesame oil (**toasted sesame oil or chili sesame oil.)

For the shrimp

  • 1 tbsp Soy sauce (**low sodium soy sauce or tamari or coconut aminos.)
  • 1 tsp red pepper flakes (**skip if heat intolerant.)

Liquid

  • 1.5 cups Water

Instructions

Scramble eggs

  • Crack the eggs in a bowl and beat them well until smooth. Set them aside.
  • Set the instant pot on sauté mode set at high heat. Add 2 tbsp oil, when the oil becomes moderately hot gently pour the beaten eggs and stir briskly until the eggs are scrambled well. You need the scrape the sides and the bottom of the pot with the help of your spatula while stirring the eggs. This will prevent the eggs from sticking at the bottom of the pot. Transfer the scrambled eggs in a separate bowl.

Sauté Shrimp

  • Take the de-shelled, de-veined shrimp in a bowl. Add everything mentioned in the "for the shrimp" section of the ingredients list above. Toss the shrimp until nicely coated with the sauce.
  • Add 1 tbsp oil in the instant pot. Gently release the shrimp and sauté until they turn opaque. Set them aside in a bowl or plate.

Sauté aromatics

  • Add 1 tbsp oil in the instant pot. Gently release the onion and sauté for 1 min. Add the garlic and sauté until the onion begins to turn soft. Cancel the sauté mode.

Deglaze pot & pressure cook

  • Add water to the instant pot insert and deglaze the pot by scraping the sides and the bottom of the pot with the help of a spatula. This will help loosen any stuck food particles and prevent burn errors.

  • Rinse the rice several times under running tap water until the water runs clear. Drain the rinsed rice with the help of a colander. Transfer the rinsed and drained rice into the instant pot and spread it into a single layer with the help of a spatula. Do not stir or mix. Add the diced carrots in a single layer on top of the rice. Do not stir or mix.
  • Secure the lid of the instant pot and seal the valve. Pressure cook on high pressure for just 4 mins. Once the cooking cycle is over the instant pot will begin to beep. Wait for 10 mins of natural pressure release, then release the rest of the pressure manually by moving the valve from the sealing to the venting position. Open the lid carefully. Cancel the pressure cook mode.

Fluff rice, add sauces

  • Now, fluff the cooked rice with the help of a fork. Add the thawed green peas. Gently mix well. Add everything mentioned in the "sauces" section of the ingredients list above. Stir well to mix well. The rice should be well coated with the sauces.

Serve

Notes

  1. Rinse rice: Rinse the rice several times with running tap water until the water runs clear. This will help rinse the surface starch from the rice. Hence, the rice will become nice and fluffy. This step will also prevent the burn error.
  2. Deglaze pot very well: Deglaze the pot scraping the sides and the bottom of the pot with the help of a spatula. This will help loosen any stuck food particles and prevent burn errors.
  3. Spicy fried rice: If you prefer spicy fried rice you can add about 1 tsp sriracha sauce along with the other sauces. You can also increase the amount of red pepper flakes.
